This is my to go to meal when I feel indecisive about what to eat. It’s like a more green version of a sushi bowl. I like to just make a large bowl of vegetables, some type of grain and beans. It’s so easy to make and surprisingly delicious and satisfying. This combination is perfect.
For 2 portions
1 cup dry rice
1/2 cup green peas
1/2 cup edamame beans
150 grams of asparagus
2 spring onions
1. Boil the rice according to instructions on the package.
2. Boil or steam the broccoli and the asparagus. If your green peas and edamame beans are frozen, make sure to defrost them in boiling water too.
3. Chop the avocado, cucumber, spring onions and also the asparagus and broccoli once cooked into smaller pieces.
4. Add all ingredients into a bowl and stir. Add some soy sauce and sprinkle with micro greens, sesame seeds and nori flakes.
