The perfect breakfast! Overnight oats with nutritious chia seeds, fresh or frozen berries, sliced banana, salty peanut butter and creamy coconut yoghurt. Filling, satisfying and delicious. They are easy to prepare the night before and you have your breakfast ready for you in the morning. If you don’t want to leave it overnight, it also works fine to let it set for an hour and then is just as good!


Ingredients:
2 portions

For the overnight oats:
1 cup oats
1.5 cup plant milk (I use Oatly barista edition)
2 tbsp chia seeds
2 tbsp desiccated coconut
1/4 tsp vanilla bean powder

Toppings:
Berries, I used frozen blueberries and fresh strawberries
Coconut yoghurt
Sliced banana
Peanut butter
Quinoa puffs
Mint leaves

Instructions:
1. In a bowl, mix together all ingredients for the overnight oats. Leave in the fridge to set overnight or for at least 1 hour.
2. In a glass, add overnight oats and layer with coconut yoghurt and fresh berries. Top with peanut putter, banana, quinoa puffs and mint leaves.
