If you are a pasta lover you should try this recipe! Perfect if you have guests or if you’re cooking for friends and family. All you need is one pot and a bunch of fresh ingredients. Italians have been cooking pasta this way, all together in one pot, for many years. The starch from the pasta makes a creamy sauce.

For 4 portions

300 grams of pasta of your chioce
1/2 Zucchini, chopped
1 cup cherry tomatoes, sliced in halves
2 small yellow onions, chopped
100 grams of mushrooms, chopped
1 red pepper, chopped
1 can of artichoke, sliced in halves
Handful of black olives, chopped
3 cloves of garlic, minced
1/2 chili, finely chopped
Fresh basil
1 can crushed tomatoes
2 tbsp tomato purée
1 cube vegetable stock
Black pepper

Roasted pine nuts
Nutritional yeast
Dried Oregano
Fresh basil

1. Add all ingredients into one large pot. Top with 1 cup of water to let everything cook down. The pasta should be just covered in water. Cook with a lid on and remember to stir. Add more water if you need to until the pasta is cooked al dente.
2. Lightly toast pine nuts in a dry pan.
3. Once the pasta is cooked add the toppings. Enjoy!
