Papaya is one of my favorite fruits. I can eat a whole papaya just as it is or preferably with some fresh lime juice. But my absolute favorite way to eat papaya is to make little boats and fill with all my favorite toppings such as fresh berries and coconut yoghurt. I love to eat this for breakfast, can’t think of a better start of the day.
Ingredients:
1 papaya
1 cup fresh blueberries
1 cup fresh raspberries
125 ml coconut yoghurt
1 lime
1 tbsp quinoa puffs
Fresh mint or lemon balm
Instructions:
Cut the papaya in half and add all toppings. Squeeze fresh lime juice on top.
