This potato salad is one of my favorite things to eat during summer. It’s so delicious, fresh and full of flavor. If you love potato just as much as I do, you just have to try this one! The best way to make it is with early/new potatoes but it also works with regular potatoes.


Ingredients:
800 grams of new potato
150 grams of fresh asparagus
2 small ripe avocados
1 red onion
1 tbsp dijon mustard
Fresh dill
Fresh cress
Black pepper
Salt


Instructions:
1. Wash and boil the potatoes with salt and dill.
2. Boil the asparagus.
3. Chop red onion, fresh dill, avocados and the boiled asparagus.
4. When the potatoes are done, let them cool down for a bit and then mix all ingredients together in a bowl. Garnish with fresh cress.
