This combination is just perfect! Creamy, baked sweet potatoes with spicy beans and fresh tomatoes. All topped with a delicious guacamole. It’s so easy to make and is a great option if you’re cooking for a lot of people. I just love this so much, it’s perfectly filling and warming.

2 portions

2 large sweet potatoes, washed

For the beans:
230g black beans
½  yellow onion, finely chopped
2 tbsp tomato puree
1 tsp paprika powder
1 tsp onion powder
1 tsp oregano, dried
½ tsp garlic powder
½ tsp cumin
½ fresh chili
5 tbsp water

10 cherry tomatoes, finely chopped
Fresh coriander

1 large avocado
1/3 red onion
1 tbsp fresh coriander, finely chopped (optional)
1 tbsp fresh lime juice
Salt to taste

1. On a oven tray with a parchment paper, add your sweet potatoes just as they are and bake them on 200°C for about 50 min, or until they are completely soft all the way through. Timing will depend on size of the sweet potatoes.
2. Add all ingredients for the beans into a saucepan and gently fry for 10-15 min, mash the beans slightly with a ladle.
3. Make your guacamole by simply mashing the avocado with a fork and mix in the red onion, fresh coriander and lime juice. Add salt to taste.
4. When the sweet potatoes are done, take them out of the oven and cut them length ways and stuff with the beans. Top with finely chopped cherry tomatoes, the guacamole and some fresh coriander.
