For the days when you are feeling very hungry and want a warm, filling breakfast: this is the way to go! Tofu scramble is packed with protein and is perfect after a good workout. I like to eat it together with a slice of fresh, toasted sourdough bread. You can use any toppings that you like, I like to also add some chili flakes for a spicy touch.
150 grams of firm tofu
1 handful of baby spinach
1 small shallot, finely chopped
1 tsp coconut oil
1 tsp paprika powder
1/2 tsp turmeric powder
1/2 garlic clove, minced
2 tbsp oat milk
2 tbsp nutritional yeast
4 cocktail tomatoes, chopped
1 slice of toasted sourdough bread (or any other bread of your choice)
1. Press water out of the tofu using paper towels. Crumble it in a frying pan. Add the rest of the ingredients for the scramble into the pan and fry on medium heat until nicely cooked together.
2. Toast your bread.
3. Add tofu scramble on to your bread and top with chives, fresh parsley and fresh lime.
