A very hydrating salad with watermelon, cucumber and a lot of leafy greens. I just love this one on a hot summer day! The dressing makes it perfectly tangy and creamy. I like to use red quinoa for this salad, because it has a nice, firm texture. For some extra crunch I add chopped walnuts and hemp seeds.


Ingredients:
70g mixed greens
2 cups watermelon, cubed
1 avocado, cubed
½ red onion, thinly sliced 
1 cup cucumber, thinly sliced
½ cup red quinoa, boiled and cooled
½ cup sprouts
⅓ cup walnuts, chopped
1 tbsp hemp seeds

Dressing:
1 tbsp apple cider vinegar
1 tbsp water
2 tsp tahini
1 tsp dijon mustard
1 tsp agave syrup

Instructions:
1. Mix together all ingredients for the dressing.
2. Add all ingredients for the salad in a large bowl, pour the dressing on top and stir. Enjoy!
